The menu changes seasonally at Pierre Gagnaire's top floor branch at the Mandarin Oriental Hong Kong. The team is lead by Gagniere's protege Jacky Tauvry. And the windows offer stunning views over Victoria Harbour and Statue Square.


I ordered the tasting menu, with wine pairings selected in consultation with the sommelier. Each dish alone was excellent but not necessarily spectacular, however the combination and sequence of dishes and wines together created an unforgettable experience.









Royale oyster David Herve, lemon gel, ginger, dog cockles. This dish paired perfectly with the Reisling, which initially smelled like mothballs, but upon contact with the food, a virtuous cycle was initiated.







Duck meat and foie gras in a pie crust.



Dessert. An entire meal all by itself.
